"XOCOLATL" a Náhuatl word that means “frothy water” (Xoco: Froth – Atl: Water). The origins of this solid sensual substance, that we now call chocolate, has its roots in the history of the mysterious reign of the most important civilizations: The Olmecas and The Mayas. The cocoa bean mixes flavor, aroma, texture and color to become the "Elixir of the Gods", as it was once called.
The Beginning of a Culture
The Olmecas and the Mayas, that inhabited the heart of Central America, were the first cultures to cultivate the tree named "Theobroma Cacao". In its wild state, this tree is tall in size measuring between 5 to 7 meters (17 to 23 feet), and which begins to produce at around 4 or 5 years of age, with its productive peak at 10 to15 years of age. Its productive life can last up to 50 years.

In the fourth journey of Cristóbal Colón, he arrived at the Guanaja Island, across from the Honduran coasts. The real discovery of chocolate took place in the 16th century when the Aztecs believed that Hernán Cortes was the reincarnation of Quetzalcoatl. At that time, the emperor Moctezuma II offered Cortes the Elixir of the Gods as a form of worship. The Aztecs imposed a feudal system in which the tribes had to pay taxes and the currency used was the cocoa bean. Chocolate from Mexico to Spain in 1520
Chocolate was introduced to Galicia, now Spain, by some monks travelling with Cortés on his expeditions. One of them, Fray Aguilar, sent cocoa to the Abbot of the Monasterio de Piedra de Zaragoza, the place where chocolate was made for the first time on European soil. This was the beginning of a great chocolate tradition among Spanish monks.
However, back then it was not the same chocolate as we know today. It was not until almost one century later that it was adapted to European taste. It was sweetened with honey and years later, sugar was added too. This resulted in a chocolate similar to the one we know today.
The recipe was kept secret for almost 100 years in the monasteries of Spain as chocolate was reserved for nobility. In the 17th century, the Spanish Princess, María Theresa, daughter of Felipe IV, married Louis XIV of France, "The Sun King", and the custom of drinking chocolate in the French Court was introduced and later, it was introduced in all of Europe.
